Aunt May’s 4 Tips for Making Great Festivals

Tip #1 Mixing the Dough
When mixing the dough, add the water a little at a time as you whisk everything around, vs dumping it all in all at once. This will help to get that soft consistency that leads to a light fluffy Festival.
Tip #2 Forming the Dough
You can add a bit more water, if you find that the dough is too tight. The idea is to work it for 5-7 minutes, until you have a well formed dough ball that’s medium firm and slightly sticky.
Tip #3 Letting It Rest
Cover the dough with plastic wrap or a towel and allow to rest for about 20 mins to 1/2 hr before separating into individual Festivals. This lets it set.
Tip #4 Shaping the Rolls
Forming each festival, dust your work surface with flour and divide the dough into equal pieces. Put some flour on your hands. Then using your hands roll each piece into a cigar shape. Try to make them about 3-4 inches long and not overly thick. They will increase in size as they fry.
